One Bowl – 6 Ingredient Sweet-Potato Pancakes!

It’s the weekend… and that calls for something special. Here is a super simple, 6 ingredient, one bowl Sweet Potato Pancakes for you to whip up!     You will only need these 6 ingredients:   Dry 5-7 heaped tablespoons of oatmeal 4-6 thick slices of sweet potato, boiled or steamed. You can add more depending on your preference. Slicing the sweet potatoes will make it faster to boil or steam. Steaming them is preferable (takes around 15-20 minutes) but if you’re pressed for time boiling (8 – 10 minutes) them will do perfectly fine! A dash of cinamon! A pinch of salt   Wet Almond milk (I used around 7 tablespoons). You can add more or less if you prefer the batter to be thicker or more runny. 2 eggs or flax egg (if vegan). To make the vegan egg you need: -2 Tbsp of flaxseed -5 Tbsp of water Simply mix the flaxseed and water together. Let the mixture set for 10 minutes.
