Donuts!

Donuts are so fun to eat as they are as much fun to make. In the midst of a busy week, or reading, writing, and contemplating, these yummy donuts were my saving grace.

They’re fluffy, moist, and naturally sweetened from bananas. I adapted this recipe from the amazing Karen over at Secret Squirrel Food. The best part is they’re healthy too! I agree with Karen that you can (and must) eat them for breakfast.

Without further ado, here is the recipe!

 

Ingredients:

Makes 6 (or 12 mini donuts)

 

DONUTS

Dry

1 1/ 2 cups spelt flour (or your choice of flour)

1/2 tsp baking soda

1/4 cup of unrefined muscovado sugar

a pinch of salt

1/2 tsp of cinamon

 

Wet

1 super duper ripe banana

1 tsp of vanilla essence

1/8 – 1/4 of almond milk (or your choice of milk)

1 egg / 1 tbsp chia seeds with 4 tbsp of water (left for 10 minutes to gel up)

1/4 cup of coconut oil (melted)

3 – 5 Tbsp of honey (or your choice of sweetener)

 

I went a bit over the top with the toppings, since I couldn’t decide and I thought having an array of donuts to choose from would be fun. I definitely recommend the SALTED ALMOND BUTTER glaze from Laura at The First Mess. It will CHANGE YOUR LIFE. it is that good. I recommend making a huge batch of it. So you can have this super yummy spread for anything you like. I can imagine on top of oatmeal, toast, on cookies, crackers….

 

GLAZE

 

Salted Almond Butter glaze adapted from The First Mess by Laura

1 Tbsp of honey (or your choice of sweetener)

2 Tbsp of smooth almond butter

a splash of almond milk to help thin it out if needed

a big pinch of salt

 

Dark Chocolate Blood Orange glaze

3 squares of good dark chocolate (melted over a pan with water over the stove)

2 Tbsp of blood orange juice

1 tsp of blood orange zest

 

Vanilla Lemon Glaze

2 Tbsp of yogurt / soy yogurt

1 – 2 tsp of honey (or your choice of sweetener) adjust to your level of desired sweetness

1 tsp of vanilla essence

1 Tbsp of lemon juice

1 tsp of lemon zest

A pinch of salt

 

Toppings (optional)

Various nuts (pistachios, etc)

Chocolate Sprinkles

Chia seeds

 

Instructions:

 

DONUTS

1. Preheat your oven to 180 Celsius.

2. Butter your donut pan ( i used melted coconut oil). This is to ensure that the donuts easily pop out after baking.

3. Combine the dry ingredients together. Then whisk the egg / chia seed, vanilla essence, coconut oil, honey, and almond milk together. Mix in with the dry ingredients. The dough should appear ‘yeasty’, slightly stringy feel when you mix it. Add a bit more almond milk if it seems too dry. I used around 3 tsb of honey. I didn’t want my donuts to be too sweet as I was going to top it with all of the yummy toppings.

Dough should appear and feel slightly stringy and ‘yeasty.’

4. Pour into the donut pan and bake for 18 – 22 minutes. Check with a toothpick or a skewer, if it slides out dry, the donuts are done. Rest it on a wire rack so that heat can escape from both sides.

GLAZE

1. Combine the ingredients of the flavour that you like to glaze your donuts with.

2. Pour it over the donuts. If you are adding chia seeds, sprinkles, nuts etc, add it now. Let the donuts rest so that the glaze sets in.

3. Take a bite and escape to delicious donut heaven, guilt free. (with coffee these donuts are amazing! Especially the chocolate ones)
