Oatylicious Banana Almond Butter Cookies!

Who LOVES almond butter?

 

How about ripe bananas?

 

Raise your hands up if you think that:

Bananas + Almond butter = a scrumptideliciously combination that goes oh so well together?!

If you do, (i mean, who doesn’t??) you’re going to love this cookie.

It is literally deliciousness in every bite.

It’s chewy, and soft, and sweet, and moist.

Did I mention, it’s perfect for dunking into a glass of warm milk too?

Here is the recipe!

 

Ingredients:

Dry

1 1/2 cups of oats

A pinch of salt

Almonds to decorate

A handful of chopped 4 medjool dates (optional)

 

Wet

1 super duper really ripe banana

2 Tbsp of almond butter

1 egg

1 – 2 Tbsp of maple syrup (or another sweetener you prefer)

 

 

Instructions:

1. Preheat the oven to 150 Celcius.

2. Combine the oats and salt together.

Depending on your preference of how you like the dates in the cookie:

-You may chop them really small (so they combine together in the cookie and create this sensation of fudgy sweetness when you bite into it).

-You may also want to chop them in chunky chunks, so you can taste them individually (sort of like when you have raisins in a cookie) when you take a bite of the cookie. I decided to chop the dates really small for this batch 🙂

-You may also want to not use them altogether.

3. Mash the banana into the oat mixture.

4. Add the almond butter, egg, and your sweetener of choice.

5. Use your hands to roll the mixture into small dough balls. Then press them flat into the palm of your hand and add the almonds to decorate. Place individually on a baking sheet. Be sure to leave enough space in between, so that they are not touching one another.

6. Bake for 25 – 30 minutes. Insert with a small knife or a toothpick into the center of the cookie. If they come out clean, then the cookies are done!

7. Serve warm, and happily dunk into your favorite milk!
