One Bowl – 6 Ingredient Sweet-Potato Pancakes!

It’s the weekend… and that calls for something special.

Here is a super simple, 6 ingredient, one bowl Sweet Potato Pancakes for you to whip up!

Dry

  1. 5-7 heaped tablespoons of oatmeal
  2. 4-6 thick slices of sweet potato, boiled or steamed. You can add more depending on your preference. Slicing the sweet potatoes will make it faster to boil or steam. Steaming them is preferable (takes around 15-20 minutes) but if you’re pressed for time boiling (8 – 10 minutes) them will do perfectly fine!
  3. A dash of cinamon!
  4. A pinch of salt

 

Wet

  1. Almond milk (I used around 7 tablespoons). You can add more or less if you prefer the batter to be thicker or more runny.
  2. 2 eggs or flax egg (if vegan).

To make the vegan egg you need:

-2 Tbsp of flaxseed

-5 Tbsp of water

Simply mix the flaxseed and water together. Let the mixture set for 10 minutes. It will thicken and resemble the same jelly-glutinous like texture of eggs!

 

Instructions:

1. Preheat your pan. You may put around 1 tsb of oil (coconut oil is good), but any cooking oil you usually use is fine too. Alternatively, if you are using a non-stick pan, then there’s no need for oil. Just ensure your pan is hot before putting your pancake batter.

2. Mix the dry ingredients into a bowl. Mix the oatmeal, pinch of salt, and dash of cinamon together.

3. Let the sweet potato slices cool. Then peel off their skin.

4. Mash the sweet potato into the dry ingredients mixture. Depending on your preference, you can mash them until smooth or you can leave creamy sweet potato chunks in the batter, which is what I like to do!

6. Add your almond milk and egg (or flax egg) into the batter. Mix until desired batter consistency. You may choose to add more cinamon at this point depending on how much warming ‘cinamony’ aroma your heart desires.
Ensure your pan has already warmed up. You can test this by dropping dropplets of your pancake batter onto the pan. If the droplets begin to solidify, then your pan is ready!

7. Drop your pancake batter into your desired shapes and sizes. Wait until bubbles appear throughout the surface of your pancake, and then flip them over! The bubbles show that the pancakes are ready to be flipped!

8. Cook for 30 seconds – 1 minute on the other side of the pancake.

9. Place onto plate to decorate. Get your toppings to decorate ready!

10. Decorate as you wish.

I used creamy strawberry yogurt (i think the tartness of the yogurt mixes really well with the sweet potato), banana slices, and berries.

I like to have a variety of crunchy toppings. So I added granola, cacao nibs, and of course pumpkin seeds!

You can decorate with any topping you like!

11. Serve warm and eat to your heart’s content.

    Now you make me miss for that kind of pcaankes! I still cook pcaanke the old way like mixing my desired ingredients from scratch, not from the ready mix in boxes. However, I suddenly crave for that kind of pcaanke than you have.
