Pistachio Cupcakes with Secretly Healthy Chocolate Frosting

I think cupcakes are one of the most adorably cute things to eat in the world.

Don’t you?

They’re small, you can hold them in your fingertips, and you get all the layers of flavour all in one bite – from the sweet fluffy frosting to the moist spongy cake.

Plus points if you can avoid getting your cheeks covered in the frosting and all the topping sprinkles! I definitely can’t, which always makes me feel like a kid when trying to eat them. *cheeky smile*

I was experimenting with flavours for For Valentine’s Day and I made these special Orange infused Pistachio Cupcakes with Chocolate Frosting. and guess what? This is not a cupcake that will give you an instant sugar rush and make you feel guilty for indulging in them a few hours later since the frosting is made with a secretly healthy ingredient.

I’ve gushed about all the nutritional goodness for your hair, skin, and brain that you get from avocados in this recipe for my ultra Green Smoothie Boost.

 

So in this cupcake, you get the exact same fluffy frosting texture without the nasties! It’s definitely treat you can make for your friends and yourself that your heart can feel good about!

 

Here are the ingredients that you need:

 

Makes 5 small cupcakes

For the cupcake:

Dry

1/2 cup of wholemeal flour

1 tsp baking powder

1/4 cup of granulated unrefined cane sugar

1/4 cup ground or finely crushed pistachios & a bit more for decoration

A small chunk of your favorite chocolate bar to sprinkle on top of the frosting

 

Wet

The juice of 2 easy peel sweet oranges

1 tsp of vanilla extract

1 egg

3 Tbsp of coconut oil (melted)

 

For the Chocolate Avocado Frosting:

The juice of 1 easy sweet peel orange

1 1/2 ripe avocado

1 heaped Tbsp cacao powder

2 Tbsp of honey (or another alternative sweetener you prefer)

 

Extra (optional) equipment:

Piping bag for frosting

 

Instructions:

For the CUPCAKE:

1. Preheat your oven to 180 Celcius.

2. Mix together your dry ingredients together in a bowl. Incorporate the wet ingredients into the dry.

3. Line a cupcake baking tin with cupcake cases and pour the mixture into the cupcake cases.

4. Let it bake in the oven for 18 – 20 minutes. Be sure to check around the 18 minute as these do cook quite quickly. When the cupcake is ready, it should be slightly brown on the surface. To be sure, insert a toothpick into the center and if it slides out clean, the cupcake is ready!

For the FROSTING:

1. Mash in a bowl 1 1/2 ripe avocados.

2. Add in the cacao powder, sweetener, and the juice of the orange.

3. Put the ingredients into a blender or food processor. Alternatively, some good old elbow muscle will do too! Simply whisk whisk whisk until the frosting is smooth!

4. Put the chocolate mixture into a piping bag and pipe the avocado frosting onto your cupcakes. Alternatively, you can also use a spatula to layer the frosting onto your cupcakes.

5. Roughly chop some pistachios and your favorite bar of chocolate (I used Green & Black’s Organic 85% Dark Chocolate Bar) and sprinkle them on top of your cupcake frosting!

When I was making these cupcakes, I had a flash of synchronicity and was reminded of my constant inspiration and #lightmaker Cassandra Bodzak.
