How has your week been?

My week has been a blur as of lately. Between searching for job openings, writing, writing for the blog, writing for Balanced Being, baking and photographing. It’s been quite a ride. No two days are the same.

It’s exciting, I’m learning a whole lot.

How to conquer your fear

I recently wrote an article called 3 Steps to Flushing Out Your Fear for Natalie’s Balanced Being blog. I take you through these steps to conquering your fear and be able to do anything you want! I feel that we all have something that we are called to do; something that  we are intuitively pulled to. Yet, at times we may avoid doing it because we feel scared. We start thinking in our minds of the ‘What ifs?’ What if something horrible happens, what if this and that….  We don’t know for sure what will happen, but everything that we do in life is a learning experience and that’s good for us. Look out for that article, it should be out sometime next week, and I’ll give a shout out on social media when it’s out. 🙂 In the meantime take a look around Natalie’s blog, there’s a lot of healthy recipes and healthy foodie / skincare brands. She’s recently wrote a blog post on how good it is for our body to have rest and that it’s okay to ask for help when we feel like we need it. It’s an eye opening read 🙂

Miracle Mornings

I’ve also been interning for Cassandra Bodzak. She’s an amazing holistic lifestyle coach that teaches others how to live a lifestyle that lights them up. She’s a plant based foodie and has amazing Youtube videos with all kinds of advice on how you can live a life that feels good to you. Head on over to her channel and subscribe! She’s been doing ‘Miracle Morning’ sessions and these are lessons from A Course in Miracles. I love her Instagram too, it’s filled with a lot of positive goodness that will leave you feeling happier. I’m learning a lot from her and she’s an incredible inspiration to me since she’s living the career that I aspire to have.

Finding Nemo

So, in the midst of all of these experiences. I began feeling nostalgic. There’s something comforting about watching a movie you’ve already watched. One night I had the urge to watch Finding Nemo. I’ve always loved the movie, I was 10 when I first watched it. I can’t believe it’s already been 12 years since it came out! This time around though, I felt I was watching the movie with new eyes. It’s strange what 12 years of experience does to you. It led me writing this article for Buzz Feed: 10 Wise Truths You Can Learn From Finding Nemo.

It’s filled with funny gifs and I think Dory has got it on point on what it takes to make it in life. A lot of exciting things have been going on.  I felt compelled to share because you are my blog readers and a lot of the things I’m doing across the net are for you guys to enjoy. 🙂 I hope that you take something away positive every time you read them and that it makes your day brighter!!

 

I was also playing around in the kitchen this week and made these Vegan Raspberry Muffins with Almond Butter Streusel.

They’re naturally sweetened, with a zing from the raspberries, and topped with almond butter streusel. The almond butter really tops it off. They’re great to have warm as an afternoon snack with your cup of coffee!

Vegan Raspberry Muffins with Almond Butter Streusel

 

Recipe

Makes 10 – 12 muffins

 

Dry

2 cups of wholemeal flour

2 tsp of baking powder

A pinch of salt

1/2 cup unrefined muscovado sugar

 

Wet

1 chia egg (combine 1 Tbsp of chia seeds with 4 Tbsp of water)

4 super duper ripe bananas

1/3 cup of melted vegan butter

1/2 – 3/4 cup of unsweetened almond milk

 

For the STREUSEL

1/4 cup dark muscovado sugar

4- 5 Tbsp of flour

2 – 3 Tbsp of almond butter

A pinch of salt

Instructions

1. Preheat your oven to 180 Celsius. Butter a normal sized muffin tin so that your muffins don’t stick. Alternatively, you can use the muffin paper cups.

2. Make your chia egg. Leave it for 10 – 15 minutes for it to gel up. In a bowl, mash up your 4 ripe bananas. Then combine your chia egg with the banana. Once mixed, add your melted vegan butter and 1/2 cup of almond milk. Mix until it is well combined.

3. In another bowl, sift your flour. Sifting the flour helps incorporate more air into vegan baked goods so it’s not as dense. Then combine with the baking powder, salt and sugar. Pour the wet ingredients into the dry ingredients. Fold until it is combined. If it seems dry, add a splash more almond milk for it to come together. The mixture should be wet enough but doughy with lumps in it to be able to pour. Fold in your raspberries. You can use either frozen or fresh raspberries.

4. Using a spoon, scoop up some of the mixture into you muffin tin or muffin paper cups

5. Make your streusel. Combine in a bowl, the sugar, almond butter, and flour. With your hands massage the mixture until it resembles like wet sand.

6. Pour your streusel on top of your muffins. Liberally.

7. Bake your muffins for 22 – 28 minutes. If the muffin has not completely risen or has not turned brown around minute 20 – 22 let it bake a bit more. Insert a toothpick in it, if it slides out clean, it’s done!

8. Let it cool on a wire rack. Serve warm.

    I’m glad to hear that you’re going well, and I’m sorry that I haven’t been around on your blog much – the workload at school has been continuously increasing with final exams just around the corner, but fortunately there have also been other exciting things in my life, such a friend visiting from overseas.
