Vegan Raspberry Crumble Bars

So… I have something to celebrate! Yesterday on Friday, as of 4.30 pm in the afternoon, I stepped out of my very LAST exam of studying law and business. I don’t think I ever mentioned it here on the blog that for the past 4 years I’ve been studying at the University of Edinburgh. There will be a reflective post coming soon on the lessons I learned in the past 4 years because I’ve learned a lot in terms of growing up mentally & emotionally and I think it would be very valuable to share with you guys! But today’s post I’m going to share a simple recipe for Vegan Raspberry Crumble Bars  that helped me get through the last week of exams. They make the perfect on the go breakfast or also as a dessert, served warm with vanilla ice cream or your favorite creamy yogurt. You can slice the bars anyway you like, big bars to take and run out of the door for busy mornings, small bars, or even mini-er bars 😉 …

Cinamon Scrolls + life’s meaning, happiness, purpose.

I come across the answers that seem to make sense of this thing we have called life.   So as my thoughts on life, and it’s meaning (the post on life’s meaning have moved here) manifested, the dough of these yummy Cinamon Scrolls were rising. I adapted the recipe from Minimalist Baker. Here is the original recipe by the talented Dana.  The recipe for the dough was simple and so yummy, I …

Cinamon Orange Vanilla Scented Granola

It’s Friday! (Finally) Oh how I missed writing a full blog post for you guys. I am super sorry and thank for sticking through with me. This week has been a super busy week, there was dissertation and a group work deadline that had to be submitted. Despite the hectic week,, it was also a week worth celebrating. Just yesterday on Thursday, I submitted my dissertation for law. The work I have been working on for the past 7 months, after many nights of despair, writer’s block, editing, and at times when I felt like I was drowning in words… I couldn’t tell you how good it felt when I hut the SUBMIT button. IT WAS FINALLY DONE. I wrote a short post on this past Tuesday on Instagram about Positive Persistence. Truth be told, I was having a mini mental breakdown. There was so much to do in so little time, I didn’t know how I was going to get through. There will be times in life when our mental / physical endurance will …
