Vegan Raspberry Crumble Bars

So… I have something to celebrate! Yesterday on Friday, as of 4.30 pm in the afternoon, I stepped out of my very LAST exam of studying law and business. I don’t think I ever mentioned it here on the blog that for the past 4 years I’ve been studying at the University of Edinburgh. There will be a reflective post coming soon on the lessons I learned in the past 4 years because I’ve learned a lot in terms of growing up mentally & emotionally and I think it would be very valuable to share with you guys! But today’s post I’m going to share a simple recipe for Vegan Raspberry Crumble Bars  that helped me get through the last week of exams. They make the perfect on the go breakfast or also as a dessert, served warm with vanilla ice cream or your favorite creamy yogurt. Cinamon Scrolls + life’s meaning, happiness, purpose.

I’ve been reflecting on life a lot lately. Hence, the need to make these fluffy Cinamon Scrolls. The name Scrolls came when I was rolling the dough and I thought how they seem reminiscent of in the olden days when someone would write on parchment paper, roll it up, tie it up with a string and store it. Anyways, back to the present and these Cinamon Scrolls. Sometimes, when I’m caught in thinking, I feel the need to bake something that takes time. Can anyone relate to that? Donuts!

Donuts are so fun to eat as they are as much fun to make. In the midst of a busy week, or reading, writing, and contemplating, these yummy donuts were my saving grace.     They’re fluffy, moist, and naturally sweetened from bananas. I adapted this recipe from the amazing Karen over at Secret Squirrel Food. The best part is they’re healthy too! I agree with Karen that you can (and must) eat them for breakfast. Without further ado, here is the recipe!   Ingredients: Makes 6 (or 12 mini donuts)   DONUTS Dry 1 1/ 2 cups spelt flour (or your choice of flour) 1/2 tsp baking soda 1/4 cup of unrefined muscovado sugar a pinch of salt 1/2 tsp of cinamon   Wet 1 super duper ripe banana 1 tsp of vanilla essence 1/8 – 1/4 of almond milk (or your choice of milk) 1 egg / 1 tbsp chia seeds with 4 tbsp of water (left for 10 minutes to gel up) 1/4 cup of coconut oil (melted) 3 – 5 Tbsp …
