Today I have a poem for you and a beautiful rustic vegan apple gallete.

I have had trouble stringing coherent sentences these days amidst job applications. It takes a very long time to fill one job application and to my dismay, I haven’t heard back from any. It’s not a good feeling and it makes me feel like I’ve lost hope. But I guess with these things you have to throw your nets as far as possible and hope that one catches. One afternoon I simply couldn’t fill out an application any longer and decided to bake.

I’m glad I made the choice because this apple gallete has the tartness of the apples combined with the buttery soft sweet pastry as the crust. and I love the crust. Whenever I eat a cheesecake, I always always eat the crust last, because it is the best part of the cake!

The childlike nature in me refuses to lose hope in this job hunting season. Perhaps it’s something else that you’ve been working on and trying day after day after day after day; but nothing seems to be working. I get what that feels like. But don’t lose hope. Keep on working at it. Keep the faith. Practice on. Grow. Build. Because I believe that there are unseen forces at work beyond what we can see. I believe that life is always working in our favour; to help us be the person that we were born to be. To help us accomplish great things; things that fuel our hearts and also ignites fire in others.

Just as the flowers bloom in its own time, and the sun rises when its meant to. There is a kind of beautiful magical synchronicity to life. So I refuse to lose hope.

So, I have written a short poem. Because sometimes, things are better conveyed in short sentences. and metaphorical terms. 😉

There’s magic within you

That bubbles up and froths

It erupts in the quiet

Stillness unmistakeable moments

No. You do not need to go off running to find the moonlight

In its effervescent glory.

There’s magic within you.

You don’t believe it so,

But it hums and sings to you

All the day long

It’s always been there all along

There’s magic within you.

But you seek elsewhere

and when you find it.

it bouquets of roses; fallen petals

old yellowed books

dotting cups of tea

dusty old teddy bears

remnants of old memories

you still cannot see;

There’s magic within you.

Oh, when you do find it

and I do hope you find it

The magic within you

As it pulls you in,

may you hold on to it

As dearly as it has been calling out

to you.

Recipe

For the PASTRY

1 1/2 cups of wholewheat flour

2 tsp of muscovado sugar

6 Tbsp of vegan butter

A few Tbsp of cold water

 

For the FILLING*

3 apples (I used red gala apples)

2 Tbsp of dark muscovado sugar

1.5 Tbsp – 2 Tbsp of cinamon

*You can be creative with the filling! Combine apples with berries, use pears and chocolate, anything that you’d like!!

 

Instructions

For the PASTRY

1. Combine the wholewheat flour and sugar together in a large bowl. Measure out the butter and start combining it with your hands with the flour and sugar mixture. As you work the mixture, it should come together into a dough. Sprinkle some of the cold water to help the dough come together.

2. Roll the dough into a ball and cover it with cling film. Store it in the fridge for the dough to chill as you cut the apple slices.

 

For the FILLING

1. Combine the cinamon and sugar in a small bowl. Use more or less cinamon depending on your preference.

2. Carefully, slice the apples in quarter shapes (like in the photo) to around 0.5 cm thick.
ASSEMBLING

1. Preheat your oven to 175 Celcius.

2. On a lightly floured surface, using a rolling pin, roll out the dough that has been chilled. Roll it out into a circle roundish shape if you can. Mine came out to be more of a rectangle and that’s okay too!

3. Sprinkle some of the cinamon sugar onto the surface of the dough. Leaving about 5 cm of pastry from the outside, layer the apple slices in concentric circles starting from the outside circle, each apple slightly overlapping the next.

4. Fold the pastry edge up over the apples.

5. Melt some vegan butter and using a pastry brush, brush over some butter over the pastry edge. Sprinkle the leftover cinamon sugar over the apples and the pastry crust. The butter and sugar will help turn the crust a golden brown as it bakes.

6. Bake for 40 – 50 mins until the apples are soft and the pastry is a crunchy golden brown.

7. Let it rest in the pan as it cools. Slice into squares or pizza shapes (as shown in the photo) and serve with vanilla ice cream or creamy natural yogurt.
